Topic 4: You too can cook...kind of....(Mom)

My mom really is my biggest cheerleader. Even though my cooking is LESS than par, she continues to encourage me (as I come from a long line of excellent cooks, I assume she thinks I have it in me?) She's the best.

She suggested that I wrote with the topic in mind...I too can cook. And I must secretly admit, I am really learning to enjoy it and would love to improve my cooking skills. Any suggestions?

It really is hard to learn because Greg is SUCH an awesome cook and it has spoiled me. Not to mention Central Market is on my way home from work...

This weekend we cooked for friends in Galveston and I made my mom's spinach salad which is delicious and was a hit by all.

Mom Girl's Spinach Salad
(Portions to your liking)
Baby Spinach
Sliced Strawberries
Diced Avocado
Gorgonzola or Blue Cheese
Pecans
Brianna's Blush Vinaigrette Dressing
Feta and Walnuts can also be substituted.

I also made a delicious Mint Chocolate chip ice cream pie...below is the picture. I will upload the recipe later this week.


I love easy, healthy (or not healthy...) recipes for beginners, so you have any yummy recommendations please comment below! (Me and Greg will BOTH appreciate it!)

Hope everyone enjoyed their weekend. We loved being down in Galveston for the first time since March and look forward to spending the 4th of July there next weekend.
